Baked Banana Oat Cups (Easy, Quick, and Healthy)

Description

These banana oat cups are super easy and quick to make. They make a great breakfast or snack for toddlers, kids, and adults. The best part of these oat cups is that you can customize them in many ways so you can change them up every time!

Ingredients
  • 3 cup old fashioned oats (you will separate these into two portions - 1 cup and 2 cups)
  • 2 tsp baking powder
  • 2 tsp cinnamon
  • 1/2 tsp salt
  • 2 smashed bananas
  • 2 eggs
  • 1 cup almond milk (you can substitute for any kind of milk)
  • 1/4 cup maple syrup
  • 1/2 cup almond butter (you can use any kind of nut butter)
  • 2 tsp vanilla extract
Instructions
  1. Preheat the oven to 350°F
  2. Pulse 1 cup of oats in food processor (or blender)

    Pluse for 20 seconds or until they are ground into flour.

  3. In a large bowl, whisk the remaining 2 cups of oats, oat flour, 2 tsp of baking powder, 2 tsp of cinnamon, and 1/2 tsp of salt
  4. In a medium bowl, whisk 2 smashed bananas, 2 eggs, 1 cup of almond milk, 1/4 cup of syrup, and 2 tsp of vanilla extract
  5. Pour the wet mixture into the dry mixture and combine
  6. Stir in add-ins

    This is when I add the 1/2 cup of almond butter. I will often also add 1/2 cup of grated carrots.

  7. Spoon batter into muffin tin
  8. Bake for 30 minutes or until they are golden brown on top
  9. Place on baking rack to cool
