Baked Banana Oat Cups

If you’ve read my other recipes on my blog, you can probably guess that I am a huge fan of easy, quick, and fast recipes. I love sharing these types of recipes because I know a lot of people are like me and don’t have a lot of time on their hands.

I especially love how toddler-friendly this recipe is. I’m not just talking about the fact that my toddler will eat two of these as a “dessert” after eating her lunch, but I’m also talking about the fact that she can help me make these oat cups. I’ve found that she is much more likely to eat whatever I am cooking or baking if she is involved – so bring on the mess!

We (my toddler and I) start off by pulsing 1 cup of old-fashioned oats in the food processor (you can also use a blender) until they are a flour consistency. We then use a large bowl to whisk this flour, along with 2 cups of whole old-fashioned oats, baking powder, cinnamon, and salt.

We then smash 2 bananas (while also sneaking in some bites) and put them in a medium bowl. We add eggs, milk, maple syrup, and vanilla extract to the smashed bananas and whisk everything together. Then, we pour the wet ingredients into the bowl with the dry ingredients and combine.

This is where I like to stir in some add-ins (I try to switch these up every time I make them to keep things interesting). I like to add some almond or peanut butter and grated carrots (I’m also a huge fan of sneaking in vegetables whenever I can, and the carrots work well here!). You can add anything you’d like – mini chocolate chips, raisins, berries, etc. Just make sure your add-ins are age appropriate if making these for a toddler.

Once all the add-ins are combined into the mixture, we spoon the batter into the muffin tin. I use these reusable silicone muffin liners that are easy to clean. Lastly, we place the muffin tin in the oven and bake at 350°F for 30 minutes or until they are golden brown on top. That’s it!

I can’t resist sharing some pictures of my daughter helping me. 🥰 Prepping the muffin liners is a great activity for her to do while I prep all the ingredients!

These banana oat cups are super easy and quick to make. They make a great breakfast or snack for toddlers, kids, and adults. The best part of these oat cups is that you can customize them in many ways so you can change them up every time!

Ingredients

Instructions

  1. Preheat the oven to 350°F
  2. Pulse 1 cup of oats in food processor (or blender)

    Pluse for 20 seconds or until they are ground into flour.

  3. In a large bowl, whisk the remaining 2 cups of oats, oat flour, 2 tsp of baking powder, 2 tsp of cinnamon, and 1/2 tsp of salt
  4. In a medium bowl, whisk 2 smashed bananas, 2 eggs, 1 cup of almond milk, 1/4 cup of syrup, and 2 tsp of vanilla extract
  5. Pour the wet mixture into the dry mixture and combine
  6. Stir in add-ins

    This is when I add the 1/2 cup of almond butter. I will often also add 1/2 cup of grated carrots.

  7. Spoon batter into muffin tin
  8. Bake for 30 minutes or until they are golden brown on top
  9. Place on baking rack to cool
