Chickpeas in Tomato Sauce – An Easy and Healthy Recipe

I made this chickpea in tomato sauce recipe with my toddler while my baby napped and still had time to do other things. It’s that simple! It also requires very little cleanup!

This is another recipe that has been passed down from generations. My dad’s mom taught my mom how to make it, and now I am making it for my own family.

My toddler also had 3 helpings of this for lunch today! 🙌

How to make it

First, I thinly slice an onion and cook it in a pot with oil until it is tender. To make the sauce thicker, I toast a slice of bread and then add it to the pot with the onions. As the dish simmers in the sauce later on, the bread will break down as you stir. My grandma used to add a slice of toast to the sauce towards the end, but I like to let it soak with the onions to absorb their flavor.

Meanwhile, I hard boil 3 eggs in a separate pot.

I drain and rinse 2 cans of chickpeas. If you are using dried chickpeas, make sure to soak them overnight beforehand and boil them to your desired tenderness. You will be simmering them in the tomato sauce later on, so undercook them slightly.

I then add the can of diced tomatoes, the can of tomato sauce, the eggs (you can slice them ahead of time or break them up in the sauce), and the chickpeas to the pot and let everything simmer for about 20 minutes. Make sure to stir every couple of minutes so the sauce doesn’t stick to the bottom of the pot.

That’s it! You can add salt and pepper to taste, but other than that, this dish is ready to be eaten!

Modifications

This recipe is very pantry-friendly, so if you are missing some ingredients you can substitute them with similar ones.

For the sauce, I have used crushed tomatoes and even different types of pasta sauce.

You can also add spices like parsley or basil.

To make this recipe even heartier, you can add ground beef, ground turkey, or chorizo.

If you like a thinner sauce, you can add some water to the pot while it is simmering.

You can also make it spicey! Add some chile flakes, chile powder, or even hot peppers.

How to pair it

You can make this as a side or as a main dish.

As a side, it works well with chicken, rice, or on toast. You can even grind up the chickpeas and make it a vegetarian bolognese sauce for a plate of pasta!

I always try to serve the same meal for my husband, toddler, baby, and myself whenever I can. This dish does just that. I even put it in the food processor and made it into puree for my baby!

  1. Drizzle olive oil into a large pot and heat.
  2. Once the oil is heated, add the large thinly sliced onion and cook until tender.

    Add the slice of toast to the pot with onions and let soften.

  3. Drain and rinse the 2 cans of chickpeas.
  4. Chop the 3 hard boiled eggs.
  5. Pour in the can of diced tomatoes, the can of tomato sauce, the chopped eggs, and the chickpeas into the pot.
  6. Let all ingredients simmer for 20 minutes while stirring every couple of minutes.

    Salt and pepper to taste.

  7. Remove from heat.

Note

  • You can substitute the can of diced tomatoes for a can of crushed tomatoes. You can also just use jarred pasta sauce. 
  • You can toast the slice of bread directly in the pot, or in a toaster separately.
  • You can add water to the pot for a thinner sauce.
