Chickpeas in Tomato Sauce

Drizzle olive oil into a large pot and heat.

Once the oil is heated, add the large thinly sliced onion and cook until tender.
Add the slice of toast to the pot with onions and let soften.

Drain and rinse the 2 cans of chickpeas.

Chop the 3 hard boiled eggs.

Pour in the can of diced tomatoes, the can of tomato sauce, the chopped eggs, and the chickpeas into the pot.

Let all ingredients simmer for 20 minutes while stirring every couple of minutes.
Salt and pepper to taste.

Remove from heat.
Note
- You can substitute the can of diced tomatoes for a can of crushed tomatoes. You can also just use jarred pasta sauce.Â
- You can toast the slice of bread directly in the pot, or in a toaster separately.
- You can add water to the pot for a thinner sauce.
